2 Ingredient Sweet Potato Pancakes

Oh delicious sweet potatoes. Packed with vitamin A, vitamin C, potassium and calcium. They are also an excellent source of fiber. What an excellent choice for a creative and healthy breakfast. If you are trying to incorporate healthier ingredients into your daily diet, you must try this recipe. And the best part is super easy to make.

I just baked my 2 Ingredient Sweet Potato Pancakes and they came out perfect. Just make sure to flip them half way into baking. I also added a dash of cinnamon for extra flavor. You can serve them with honey, Maple Syrup (the REAL stuff only), Greek yogurt, and fresh fruit. Baking is easier because you won’t really make a mess in your kitchen.

Not only are these sweet potato pancakes great for breakfast but as an afternoon snack. It is just amazing to know that with only 2 ingredients you can make delicious and healthy pancakes. Make sure to get an extra large sweet potato for this recipe. Naturally sweet and soft, these pancakes are also great for toddlers because they can just eat them with their little hands.

We’ll check out the super easy recipe in just a minute. First, though, I want to tell you a bit more about why I only use REAL maple syrup on top. I think you’ll be pleasantly surprised by the benefits!


Why I only use real maple syrup

Like I said above, you can top these sweet potato pancakes with everything from fruit to yogurt, but there’s one thing that goes great on just about every breakfast food: maple syrup!

Here’s the thing, though: if you’re just grabbing a $2 bottle off your grocery store shelf, you’re not getting the real thing. In fact, you’re basically just throwing processed sugar, corn syrup, and some caramel coloring on top of your pancakes. Kind of defeats the purpose of making a healthy homemade breakfast, right?

The real thing may cost more, but it’s SO worth it. Not only does it taste much better, but true maple syrup actually has some health benefits that you won’t find in the fake stuff.

Surprising health benefits of maple syrup

Let’s start with the most surprising health benefit of real maple is the fact that it contains…wait for it…a whopping 20 different compounds that benefit the human body. At least that’s what researchers at University of Rhode Island discovered during a 2010 study.

According to researchers, “Several of these anti-oxidant compounds newly identified in maple syrup are also reported to have anti-cancer, anti-bacterial and anti-diabetic properties.” Can you believe that? Our favorite breakfast topper could actually help prevent cancer!

Another fascinating study found that maple syrup could be the key to cutting down on our use of antibiotics. As I’m sure you know, overuse of these medications have led to the creation of “superbugs,” like MRSA, antibiotic-resistant strains of pneumonia, and more. According to McGill University researchers, “A concentrated extract of maple syrup makes disease-causing bacteria more susceptible to antibiotics.”

While maple isn’t exactly rich in vitamins (in fact, it has virtually nil), it does have some great minerals. In fact, one serving gives you about a third of your daily manganese requirement. This essential trace element is vital to healthy bones. Of course, you can also find it in other healthier foods, like nuts and whole grains. Still, if you’re going to top your pancakes with something sweet, it may as well be something that also includes some vital nutrients, right?

Last, for those of you living with chronic pain, this  Université Laval study from 2015 may be encouraging. Those researchers discovered a molecule from maple syrup that “has interesting properties for fighting the body’s inflammatory response.” Now, you’re not likely to get enough of the molecule from pancake toppings alone, but it just goes to show how much we’re still learning about this delicious tree sap.

It’s still a high-sugar, high-cal food, so use it in moderation

All of this may make you want to dump an entire bottle of the good stuff on top of your breakfast and dig in. Not so fast, my friend. Maple syrup is still a relatively high-calorie and high-sugar food (albeit a natural sugar). One teaspoon contains roughly 12 grams of sugar, according to WebMD. Since my pancake recipe is naturally sweet, you really only need a tiny bit anyway.

Also, as I’ve said over and over (and over and over), if you’re not eating REAL maple syrup, you can forget all of those benefits. So, how do you know if it’s the real stuff? Let’s discuss. First, though, here are a few good brands to try (the first is the one I use, and the last is great if you like dark syrup)

How to tell if you’re buying real maple syrup

The first sign that you’re buying real vs. fake maple syrup is the price. While the cost depends on grading, source, and other factors, don’t expect to spend less than $7 for a pint. Syrup that costs $1-4 a bottle (even the name-brand stuff) is NOT real. Well, unless it’s on clearance or something, but typically you won’t find the good stuff for less than $7-12.

Another tip: look up when you shop. In every grocery store I’ve ever been to, the real stuff is on the top shelf. Stores put the items that people are most likely to grab first at eye level. Since more people buy the fake stuff than the real deal, the entire middle shelves are usually lined with it. FYI, the “look up” rule applies to pretty much all organic and natural foods. Even the organic mac and cheese is located on the top shelf, and that stuff is still processed as heck.

Of course, you can always just read the label! Did you know that FDA laws prohibit syrup manufacturers from using the word “maple” on the label if the contents aren’t actually mostly real maple syrup? Give it a try next time you’re at the grocery store. You’ll notice that the fake products use words like “pancake syrup” or “kitchen syrup.” Sometimes, they’ll throw in a flavor word, like “butter-flavored.” In that case, you’re not just getting artificial syrup, but fake butter as well.

  • 1 large sweet potato
  • 2 eggs
  • Dash of cinnamon (optional)


  1. Bake the large sweet potato at 400 degrees for about 45 minutes to 1 hour. You can bake the sweet potato in a cookie sheet on top of parchment paper. Prick a couple of times with a fork before baking.
  2. Peel and let it cool down.
  3. Mash the sweet potato and add the cinnamon *optional. You should have a puree consistency.
  4. Add the eggs and mix well using a whisk or hand blender.
  5. Spoon round pancakes on a cookie sheet on top of parchment paper.
  6. Bake for about 20-25 minutes at 375 degrees. Make sure you flip them half way.
