Arévalo,  the spokesperson for the Academy of Nutrition and Dietetics. According to Arévalo, quinoa contains all the building blocks of protein (amino acids) that our bodies need. White and brown rice, she said, doesn’t. She also explained that quinoa has more fiber and a lower glycemic index than rice.
